At Wynn Las Vegas, it’s a true pleasure to discover little secrets that make your stay easier. The Tower Suites valet, the upstairs patio behind the reception desk, and now, La Cave.
This wine and food hideaway impresses from top to toe with little touches. The 4,000-square-foot, 120-seat dining space is broken into intimate sections. Just past the revolving door entry is the cave room. This room has a low-ceiling and bar-height seating. A red sign lit with alluring LED lights reads “in vino veritas” or “in wine, there is truth.” Oh, how true that is.
The main dining room features a wine rack with LED lights that change color and an additional bar. The garden room is an indoor or outdoor space with sliding glass walls that let in the fresh air.
Chef Bill DeMarco’s food is the perfect complement to the sultry space. DeMarco makes it easy for you, with menu sections like “from the sea,” “from the oven” and “from the farm,” and about five dishes in each section. Each dish is meant to be shared.
A few noteworthy dishes include the sunny side duck egg. Crostini is topped with tender asparagus, crispy Serrano ham and topped with a sunny side up duck egg. The crunch of the crostini mixed with the tender asparagus, salty ham and creamy duck egg make this dish delicious at any time of day.
The bacon wrapped dates with blue cheese fondue and a fresh take on Hamachi with pickled chilies and candied lemon zest don’t disappoint. The tender baked clams are served simply with a wedge of lemon and perfectly seasoned.
If it’s the ultimate comfort food you crave, the mushroom grits are just what you’ve been looking for. Tender chunks of quartered button mushrooms are served with creamy, perfectly cooked grits.
The desserts are served right from the Wynn pastry shop and include beignets with dipping sauces and a rich mini chocolate cake.
La Cave is a wine spot with lots to offer. From restaurateur Michael Morton, this conceptual restaurant offers small plates, charcuterie and flat breads. There is also an extensive wine program and a hand-crafted beer list.
Be sure to stop into La Cave on Sundays for brunch. The brunch is served butler-style, which means you don’t ever have to leave your chair. Pay a fixed price, sit back and relax and your server will bring around plates to your table and you can choose the dishes you would like to try. You can also add bottomless mimosas, bloody Marys and more to enhance your brunch experience. Menu items include chilled tomato soup, savory mushroom grits, mouthwatering veal short rib hash, pancakes with berry compote, mini Angus burgers, baked potato loaded tater tots, New York-style egg sandwiches, scrambled eggs and more. If the weather’s nice, sit outside and enjoy the pool view. There’s no better way to spend a Sunday.
La Cave gently reminds us that wining and dining is a social experience. A sensual experience where you enjoy people’s company, a glass of wine and a bite of cheese and you’re grateful for all you’ve been given.
